Hejsan!  Since 1999 a Swedish home baking blog has been promoting Kanelbullens Dag or Cinnamon Bun Day on 4 October, a very important day in the Swedish kitchen calendar.  Each year they give prizes for the most original designs of Kanelbullen and, with hundreds of entries, there have been some fantastic designs over the years. 

 

This year we too are giving a prize of the original Cinnamon Lover’s Grater Pack for “the funniest cinnamon bun – a bun that makes us laugh!” 

 

We are appealing to all cinnamon roll lovers, especially our Swedish customers around the world: design and bake a whacky Kanelbulle and email the picture to www.kanelbullensdag.se by 30 September.  There’s also a great children’s section.  Please pass this on to any Swedish friends.

 

Here's the classic Swedish recipe, with thanks to Birgit at Hembakningsrådet

 

DOUGH

75g butter, room temperature

750ml plain flour

50ml sugar

½ tsp salt

1 tsp ground cardamom

25g yeast, crumbled

250ml milk

 

FILLING

50g butter, room temperature

2 tbsp granulated sugar

1 tbsp ground fresh cinnamon

½ tbsp breadcrumbs (optional)

 

Mix all the dough ingredients in a bowl and process powerfully with a machine for at least 5 minutes, until the dough becomes smooth. Let it rise under plastic for 30 minutes.

Stir together the filling.

Take the dough out and roll it flat. Spread the filling on top of it. Roll the dough into a long roll and cut it into 20 pieces.

Put the pieces on baking paper on a baking tray. Let it rise for about 30 minutes.

Turn the oven on to 230°C/450°F/Gas mark 8.

Whisk an egg and carefully brush it on the buns and sprinkle pearl sugar and fresh cinnamon on top.

Once hot, bake in the oven for around 5-7 minutes.
