Scandinavians love cinnamon.  Tuscany-based Swedish blogger Ilva Beretta at Lucullian Delights, named after Roman super-gourmet Lucullus, has kindly dedicated this simple but delicious recipe to us.  We had fun experimenting with different types of apples.

Oven-baked apples with cinnamon filling

4 servings

4 small apples
3 oat biscuits
2 tbsp brown sugar
25 hazelnuts
1 tsp freshly grated cinnamon
3 tbsp extra-virgin olive oil but you can obviously use butter if you prefer
1 pinch of salt

Put biscuits, hazelnuts, sugar and salt in a mixer/blender and whizz until it is like a coarse flour. Add olive oil

Cut the apples in half and spoon out the core and a little more so that you have a hole to fill with the biscuit and hazelnut mix.

Put the filled apple halves in an oven-proof form and bake in a pre-heated oven (175°C/350°F) for 15-20 minutes. Check with a fork if the apples are cooked, the cooking time depends of the size and type of apples so be careful not to burn.
