Cinnamon biscuits are an easy and delicious way to teach your children how to bake.  It’s also wonderfully messy, takes little time and produces very satisfying results.

This makes about 2 dozen:

125g softened butter

½ cup sugar

2 cups of plain flour

1 egg

1 teaspoon baking powder

½ teaspoon freshly grated Saigon cinnamon (for a mild cinnamon taste; more if you wish)

Whizz up the butter and sugar until light and fluffy.  Add egg, beating well.

Sift flour and baking powder into mixture, add cinnamon, keep whizzing.  Add more flour if the mixture is too runny.

Roll teaspoonsfull of mixture into balls and place on an oven tray.

Flatten slightly with a floured fork.

Bake at 190 c for about 12 minutes or until pale golden.
